Carol Grace Davies

December 3, 1942 - February 16, 2026

Carol Grace Davies (nee Collins) passed peacefully in the late afternoon of Monday, February 16th, at the age of 83. She was surrounded by her family, and departed peacefully from her lovely room at Ed's House. Carol is predeceased by her husband Joe, and survived by her three children, Lori Copeland (Nathan); Lisa Miller (Kevin), and Joey Davies (Jenna Holmes). Carol had six grandchildren, Jennifer (Johan), Ashley (Patrick), Daina (Andreas), Tyler (Olie), Zak (Miranda), and Aibhlinn; and nine great grandchildren, Penelope, Evangeline, Catherine, Parker, Liam, Max, Zoe, Sage and Valerie. She was also survived by her sister Sharon Newdick from New Brunswick, and her brother Marc from London, Ontario. Carol was loved by many, and was known for her cheerful attitude and positive outlook. She lived life to fullest, and enjoyed many wonderful travel experiences and adventures. She was also known as an incredibly skilled baker, particularly famous for her pastry. She baked for many friends and family, including for The Pastry Shoppe at the Cobourg Farmers Market with her daughter Lisa; and for her grandson Zak at PREP, producing Grandma Carol's Butter Tarts. Carol had been residing at Legion Village for the last several years, and was an active part of the Legion and the Ladies Auxiliary. The Legion and her friends provided a great sense of community. We would like to express our gratitude for the exceptional care and support Carol received at Ed's House Hospice. A Celebration of Life to honor Carol will be held at the Cobourg Legion at a later date.

Lori, Lisa, Joey and families my deepest sympathy on your loss. Carol was such a lovely lady. She was a kind, caring, gentle person. I had the fortune to help box cookies with her here at Legion Village and have good memories of her. We had a lot of chats along with many hugs. She will be missed dearly. God Bless everyone.

I am so very sorry for your loss. I met Carol as part of the Legion Ladies Auxiliary. She was a wonderful person. Always so kind and fun to be around. I missed seeing her at darts on Friday nights this year. She will be dearly missed by many. My condolences to her family.

What a fantastic description of your beautiful Mom, Grandma, great grandma. She had a personality that shone and an even friendlier smile that won people over. Met your Mom over 60 years ago babysitting you kids, she moved away and we reconnected again in Gores Landing years later. She was one in a million. Sending you all heartfelt condolences.
